Native American foods cheap, prevent diabetes

Beans are being touted as a magical fruit for more than just regulating the digestive system. On the Tohono O'odham Reservation in Arizona, as recently as four years ago, adults in the tribe had no beans in their diets, and more than half the adults developed diabetes. These numbers are changing, thanks to the introduction of beans and healthier foods in their diets. American Indians are now rejecting fry breads in favor of tepary beans, which are farmed in the desert. Tribes are also branching out include wild rice, salmon, corn, squash, and other fresh foods in their diets, all of which are more reminiscent of ancient American Indian diets. American Indian cuisine has been largely ignored in the culinary world, but is not being noticed due to these changes. The movement away from the more recent, unhealthy diets attributed to American Indian diabetes and obesity turning toward a return to healthier roots. No pun intended.
